  2. milk. It forms 5% of cow's milk. It is 
  3. commercially prepared from the whey 
  4. obtained in cheese-making. Like table sugar 
  5. (sucrose), it is a disaccharide, consisting 
  6. of two basic sugar units (monosaccharides), 
  7. in this case, glucose and galactose.
